A highly unique skin-contact white from Greece with bold character and Mediterranean flair. Native Greek varietials, Assyrtiko and Vidiano, are macerated on the skins for 20 days, then fermented in amphorae. Finally it undergoes an aging process under flor yeast, similar to the tradition of fino sherries, which imparts distinctive nutty, saline qualities.

On the nose, it offers a medley of aromas, including green apple, chamomile, dried herbs, and a touch of sea breeze minerality. The palate is complex and vibrant, with a bracing acidity balanced by savory undertones of almond and citrus zest, leading to a long, layered finish.
