A dry late harvest wine made only in the very best vintages from Vigneti a Prua's estate Pigato, planted on steeply terraced limestone cliffs overlooking the waters of the Ligurian sea. This wine was made only in one other vintage since 2015, as it requires ideal conditions with a long and sunny end of the summer. This is NOT a sweet wine. Although the grapes after harvest and pressing created a must with 248 g/l sugar, alcoholic fermentation was allowed to complete fully, resulting in a fully dry wine with a mere 1.8 g/l sugar and 14% alcohol. This is a lusciously full-bodied Italian white with tropical fruit notes but enough crisp acidity to balance the mouthfeel. A true treat from a small family vineyard in rustic Liguria.  

Pairing: Whole roasted fish with lemon and mediterranean herbs

The academicians all apparently believe that Pigato and Vermentino are the same; many of Liguria’s wine producers do not. Being facetious, you might say that’s because the grapes are both Favorita. No, wait: they’re all Piccabon (a wrong attribution: we now know Piccabon is identical to Vernaccia di San Gimignano). And so the story goes on. And on.
