This domaine was established by a former musician and chef, Julien Cruchandeau, with a mission to promote lesser-known Burgundian appellations that collectors now appreciate for their value. Julien's organic farming practices and hands-off approach to winemaking allow for authentic expressions of Pinot Noir, Chardonnay, and Aligoté.

Les Cabottes comprises two vineyards covering 6.17 acres, situated a few kilometers from Nuits-Saint-Georges on a steep south/southwest-facing slope at around 380 meters above sea level. Two parcels face east. The wine is produced in two tanks, with 50-100% whole cluster depending on the vintage, and aged for 15 months in 100% stainless steel. The wine has notes of cherry, raspberry, black tea, and violets, and is very elegant and approachable right away.

Grape: Pinot Noir (2021 90% whole cluster in one tank, 100% destemmed in another.)
