Ruppert-Leroy '11, 12, 13...' Brut Nature, Champagne, France NV

Ruppert Leroy is located in the village of Essoyes in the Aube, just a few kilometers from the Burgundian border. Bénédicte is the second generation winemaker and together with her father, Bénédicte has transformed the domaine from organic to biodynamic without the use of sulfur since 2013. '11, 12, 13...' is the only non-vintage cuvée from Rupert-Leroy, a generous wine and a great introduction to the Rupert-Leroy name. This cuvée comes from a perpetual reserve that includes wine from every parcel of the domaine dating back to 2011, plus organically-grown grapes purchased from friends in the Aube. The single vineyard wines are dense, mineral-driven, and structured, while this cuvée offers more generosity in its approachability with a gentle earthy finish.

Pairing: Lemon butter sauces with either fish or poultry

Grapes: 50 % Pinot Noir 50% Chardonnay, no dosage or added sulfur

Soil: Clay and limestone with various portions of red clay, gray clay, and white limestone
Viticulture: Biodynamic, no sulfur, natural

Viniculture: All cuvées are made using the same process: vinification with natual yeasts without any fining or filtering. Cold settling occurs naturally with the winter frosts. Alcoholic fermentation, malolactic fermentation, and nine months of élevage on fine lees occur in 225 L barrels and 500L demi-muids.
