    Sulfites are used in winemaking to sterilize equipment and ensure that wines remain stable once bottled. Although naturally occurring sulfites are produced during fermentation, the amount in final wines can vary widely based on choices made in the cellar. Mass-produced wines can be very high in added sulfites, while some winemakers avoid adding them whatsoever. Some wine drinkers associate them with headaches, but there is plenty of controversy over what really leads to headaches from drinking.

    With all this uncertainty, many people seek out wines with lower sulfite content just to be on the safe side.
