This saignée rosé is a balanced and generous wine made entirely from pinot noir grapes from the premier cru Mareuil-sur-Aÿ. The winemaker, Fabrice, macerates the juice on the skins for up to 12 hours before pressing and fermenting it in enamel and neutral barrique. 80% of the wine is aged for 8 months, while the remaining 20% is aged for 18 months in neutral barrique. After 8 months of aging, the current year's wine is blended with the 18-month aged wine from the previous year to create a perfect balance and luxurious palate.
