Aurelien Suenen possesses a 1.5-hectare plot of land in the Côte des Blancs. His focus is not on expansion, but on producing high-quality expressions of Champagne's chalky terroir. In order to maintain the fruit's purity and show respect for the soil, Aurelien refrains from using herbicides or pesticides on his small property. The Oiry, with only 3g/l residual sugar, is a lean and racy Blanc de Blancs that is beautifully balanced and both mouth-filling and mouth-watering.
