Les Pensees is the top cuvee from the venerable Domaine de Pallus. The oldest vines on the estate are used for this bottling. A long and gentle maceration and extended elevage in ex-Burgundy barrels is winemaker Bertrand Sourdais' secret to subtle and truly expressive Chinon rouge. Refreshing and lightly peppery, but smooth with dense red berry notes and a luxurious finish. This is a serious but accessible expression of Cab Franc that drinks above its price point.
