This zingy white is made with Albarin Blanco (not to be confused with Albarino) from organically managed vineyards planted in 2008.  Stony topsoil on this site helps radiate heat through the cool nights in the continental climate of Leon. The grapes are handpicked and de-stemmed before spontaneous fermentation. 

The wine is aged in large neutral wood vats for 9 months but no malolactic fermentation occurs, preserving the snappy acidity.  Fresh notes of green apple and honey on the nose.  This is fun and fruity and pairs well with summery dishes and any seafood that has a little kick.
