Another weird and wonderful white from Christophe Pueyo, young Bordeaux boundary-pusher and 5th generation owner of Château Belregard-Figeac. Produced from fully ripe Sauvignon Blanc grown on asterie limestone, this wine defies the norm of your typical Bordeaux blanc by undergoing malolactic fermentation in large 500-liter open-top demi-muids. It is then aged for 18 months in the same large barrels, allowing the development of secondary and tertiary flavors like honey, custard, and the playful nuttiness that comes from subtle oxidation.
A powerful wine with a refreshingly sharp acidity, unfolding with notes of lemon curd, poached pear, crystalized honey, and bruléed lime. This non-traditional Bordelaise wine is a must-try for lovers of esoteric whites and Sauvignon Blanc alike.
