Filippo Pratesi produces this Chianti Classico in a style that is, well, classic.  The Castagnoli vineyards are certified organic by ICEA, and overlook the Tuscan countryside from an elevation of 450 meters. The Sangiovese is harvested at perfect ripeness, and no later, to strike the balance of full flavor and food-friendly acidity. Aged for 18 months in only neutral barrels to preserve the complex herbaceous and plum notes while softening the lovely tannins.
