The wine's perfect combination of climatic variations comes from its northwestern exposure, slight elevation, and diurnal temperature shifts. This intriguing blend of Roussane, Marsanne, Grenache Blanc, and Vermentino work symbiotically to create a structured wine with lively acidity, a salty palate, and a Mediterranean flavor. Despite being from a very warm climate, the wine has a refreshing taste that is sure to satisfy.
Sylvain Fadat and his family have been farming the large, eighteen-hectare lieu-dit called Aupilhac in Montpeyroux for three generations. Despite the challenges, Sylvain cleared the ancient volcanic amphitheater of boulders and shrubs to plant a vineyard. The Cocalières site, where white and red grapes are grown, benefits from both high elevation and cooler northern exposure, producing wines of exceptional purity, finesse, and minerality. The investment was huge, and the labor was back-breaking. The wines of Domaine d'Aupilhac have a perfect balance of ripe fruit, power and grace.
