Terra di Rovo is a small estate growing indigenous Umbrian varietals in the volcanic soils of Italy's Apennine mountains. Trebbiano Spoletino is an ancient native vine of the Spoleto valley here, producing wines with both high acidity and body. Only the native yeasts present in the vineyard carry out the fermentation in stainless steel, in a fully natural style without any added yeasts or sulfites (zero/zero). A full-flavored wine with a plethora of ripe fruit notes imbued with the power of volcanic soils. Expect deeper flavors than your average white wine; candied lemon, marzipan, baked apple, and white pepper. Pairs well with richer Italian or Greek fare like cream sauce pastas, spiced grilled chicken or fish, or truffle risotto.
